On the far north-west coast of Scotland, a small whisky distillery is doing things a little differently.
Nc’nean, which started in 2017, is the country’s first fully organic distillery. The business is based on the Drimnin estate near the Isle of Mull, where founder Annabel Thomas is shaking up the traditional image of Scotch with a more experimental and sustainable approach.
A New Take on Old Fashioned
2 cl Tough Nut
3 cl Macadamia
3 cl Rum
1 cube of sugar
Angostura Bitters & Orange
Place the sugar cube in a tumbler and sprinkle with Angostura bitters, add a splash of water, stir and waitfor the sugar to dissolve, fill the glass with ice cubesand add Macadamia, Tough Nut and rum. Stireverything together and garnish with orange peel.

The Background: Clayton’s Cocktails was an idea born in lockdown at Clayton’s Marlow, an award-winning bar, renowned for bringing quality music and serving up expertly mixed cocktails to the those in the know. With both the dance floor and glasses empty Clayton's needed a way to get the music and cocktails to people’s homes and so it began.
The Story Behind | Matcha

Farmers grow Matcha by covering their tea plants 20–30 days before harvest to avoid direct sunlight. This boosts the amino acid content and increases chlorophyll production giving the plant a darker green colour. Once the tea leaves are harvested, the stems and veins are removed and the leaves are ground up into a fine powder known as matcha (Healthline).
Matcha was regularly consumed by Zen Buddhist monks during long hours of study. Pictured Kōdō Sawaki, considered to be one of the most significant Zen priests of his time.

Ginger is a flowering plant that originated in Southeast Asia. It’s among the healthiest (and most delicious) spices on the planet. It belongs to the Zingiberaceae family, and it’s closely related to turmeric, cardamom, and galangal. The rhizome (underground part of the stem) is the part commonly used as a spice. It’s often called ginger root or, simply, ginger. Ginger can be used fresh, dried, powdered, or as an oil or juice. It’s a very common ingredient in recipes. It’s sometimes added to processed foods and cosmetics.
Here are a few of the many health benefits of ginger:
(1) Gingerol has powerful anti-inflammatory and antioxidant effects. It may help reduce oxidative stress, which is the result of having an excess amount of free radicals in the body, (2) May drastically lower blood sugars and improve heart disease risk factors, (3) Can treat many forms of nausea, especially morning sickness. Story Behind | The Moscow Mule

The History: In 1939, an alcohol company president named John G. Martin had obtained the rights to Smirnoff vodka. There was only one small problem: for some reason, Americans wouldn’t drink it, sticking to their ingrained preference for gin and whiskey instead. By 1941, he was all but ready to give up on his endeavour. But then everything changed when, on one of his frequent trips to L.A., he dropped by the Cock ’n’ Bull, a famous bar owned by his good friend Jack Morgan.
Turns out, Jack had a problem of his own: his cellar was packed with his own brand of unsold ginger beer, which he simply couldn’t get his customers to drink – people preferred ginger ale at the time. Cue proverbial lightbulb moment: after a bit of experimentation, Cock ’n’ Bull bartender Wes Price came up with a refreshing cocktail combining these two ingredients, plus lime juice, over ice. It was magic: the potent ginger flavour did wonders to temper the strength of the vodka, and the fresh lime juice just tied it all perfectly together. The Moscow Mule was born – the name supposedly a nod to the spirit’s place of origin and the drink’s undeniable “kick”. (worldsbestbars.com)
The Recipe: 50ml Sapling vodka, crushed ice, 150-200ml The Root Co. ginger beer, few dashes of ginger bitters. To serve, add a sprig of mint and a wedge of lime.

Three years ago, The Root Co. founder Will decided to shake up the world of non-alcoholic Ginger Beer. The idea was simple: bridge the taste gap between the sickly-sweetness of existing Ginger Beers and the zingy punch of a Ginger Shot.
In Summer 2020, he finally started brewing and tinkering with Ginger flavour. By batch 25, the recipe was getting close; he left his management consulting job and founded The Root Co in Feb 2021.
Now he makes drinks full-time: trying to revolutionise Ginger Beer, yes, but also overhauling the 'normal' way of doing things by cold-pressing everything. And keeping the recipe simple, natural and healthy.
